DRIED CRANBERRIES POWER BITES
- 1 cup old-fashioned oats
- 1/2 cup dried cranberries
- 1/2 cup chunky peanut butter (or your choice of nut butter)
- 1/2 cup coconut flakes, toasted
- 1/3 cup honey or agave
- 1/4 cup ground flax seeds
- 1/4 cup hemp seeds
- 1/4 cup white chocolate chips (optional)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Step 1:
In a large mixing bowl, combine oats, dried cranberries, peanut butter, coconut flakes, honey, flax seeds, hemp seeds, white chocolate chips, vanilla extract and salt. Mix until well combined.
Step 2:
Keep a bowl of water nearby as you form power bites. Using a tablespoon, scoop out oat mixture and roll into balls. Keep hands slightly wet to form balls easily.
Step 3:
Serve immediately or chill in refrigerator for 30 minutes to firm up and keep up to 5 days in refrigerator to enjoy throughout the week.
