Vanilla Scones

Ingredients
- 2 ¼ cups all-purpose flour
- 1/2 tsp. salt
- 1 Tbsp. baking powder
- 1/3 cup granulated sugar
- 1 egg
- 1/2 cup milk
- 1 Tbsp. pure vanilla extract (recommend vanilla bean paste)
- 3/4 cup cold unsalted butter, cubed
- Vanilla Glaze
- 1 ½ cups confectioners
- 2 Tbsp. unsalted butter, melted
- 2 tsp. pure vanilla extract (recommend vanilla bean paste)
- 2 Tbsp. water (may need more depending on thickness of glaze)
Directions
- Step 1 Preheat oven to 425 degrees.
- Step 2 In a stand mixer fitted with the paddle attachment, mix together flour, salt, baking powder, and granulated sugar. Add cold butter and mix on low speed until coarse crumbs form, careful not to over mix. (If you don’t have a stand mixer, then a pastry cutter or food processor will work. If using a food processor, be very careful not to over mix.)
- Step 3 In a small bowl, whisk together the egg, milk, and vanilla extract then add it to the mixer and mix until dough comes together. The dough will be crumbly (careful not to overmix).
- Step 4 Flour a clean service and knead the dough just a bit until it comes together. Form dough into a circle (or if you want smaller scones, form into two circles) about 1 inch in thickness. Use a knife or pizza cutter to cut the dough into 8 wedges (per circle). If the dough is sticking to the knife/pizza cutter, coat the knife/pizza cutter with flour.
- Step 5 Place on a baking sheet and sprinkle with granulated sugar. Bake for 10-14 minutes or until edges are slightly golden. Remove from the oven and place on a cooling rack.
- Step 6 While scones are cooling, add all the glaze ingredients into a bowl and whisk – glaze will be slightly thick but should drizzle off a spoon. Use a spoon to spread glaze over cooled scones. Let stand until glaze is set.
