New York Style Cheesecake

Ingredients
- 2 cups Graham Cracker Crumbs (Kroger or “Keebler”)
- ¼ cup confectioner’s sugar (powder suger)
- ½ cup butter
- 5 (8 oz.) packages cream cheese, softened (room temperature)
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon vanilla
- 4 eggs
- 1 cup sour cream
- Topping:
- One bar of bitter-sweet chocolate (4 ounce)
- 3 table spoons of corn syrup (Kroger brand is okay)
- 1 table spoon of cold butter
- Heavy whipping cream (half cup boiled, take off when it starts to boil)
Directions
- Step 1 In small bowl mix together graham crackers confectioner sugar
- Step 2 mix in melted butter. Place in bottom of 9-inch spring form pan. Chill in freezer while preparing cheesecake batter.
- Step 3 In large mixing bowl, beat softened cream cheese on medium speed with electric mixer until fluffy. Add 1 cup sugar, 2 tablespoons cornstarch and 1 tablespoon vanilla. Beat with mixer until combined. Add eggs one at a time, beating until combined after each addition. Stir in sour cream.
- Step 4 Pour cheese mixture into chilled crust. Bake at 325 degrees for about 1 hour or until center is almost set. Cool on wire rack. Top as desired.
- Step 5 Break up chocolates to small pieces, and put them to a bowl. Add 3 tablespoons of corn syrup, and 1 tablespoon of cold butter. Pour hot cream into the bowl. Allow 3-4 minutes to melt, mix with whipper (egg whipper). Add to a totally cooled off cheesecake, only pour only in the center
