Roasted Brussels Sprouts with Balsamic and Honey

This recipe makes crispy, flavorful Brussels sprouts with a delicious balance of sweet and tangy flavors.

Ingredients:

  • 1 ½ lbs fresh Brussels sprouts (See Note 1)
  • 3 tbsp olive oil, separated
  • ¾ tsp kosher salt
  • ½ tsp ground black pepper
  • 2 tbsp balsamic vinegar
  • 2 tsp honey

Instructions:

  1. Preheat the oven to 425°F (218°C).
  2. Line a baking sheet with aluminum foil or a Silpat silicone baking mat.
  3. Trim off the outer dry leaves, cut off the bottom, and slice the Brussels sprouts lengthwise.
  4. In a large bowl, toss the Brussels sprouts with 2 tbsp of olive oil, kosher salt, and freshly cracked black pepper, ensuring even coating.
  5. Transfer to the baking sheet and roast for about 20 minutes, or until tender and caramelized.
  6. Place the roasted Brussels sprouts back into the bowl. Add the remaining 1 tbsp olive oil, balsamic vinegar, and honey, tossing until evenly coated.
  7. Taste and adjust seasoning with additional kosher salt if needed.
  8. Serve warm and enjoy!
