Chicken Salad

Ingredients
- chicken breast (3-4 pieces)
- chicken bouillon
- mayonnaise,
- dried cranberries (1/3 bag)
- sliced almonds
- grapes/apples
- salt
- pepper
Directions
- Step 1 Boil the chicken breast with chicken bouillon for flavor. Once done, cut the chicken into small cubes and let it cool
- Step 2 Add mayonnaise (I like to use reduced fat brand). Add a little of mayo at a time and just enough mayo for your liking. I like mine moist, but not too much extra mayo.
- Step 3 Add dried cranberries and add enough to your liking. Generally, I add ~1/3 of a bag.
- Step 4 Add sliced almonds and add enough to your liking
- Step 5 Flavor with a little of salt and pepper – add enough for your liking, but I usually do not add a lot since the bouillon adds flavor too.
- Step 6 Before you are ready to eat, slice grapes or apples into small pieces and stir it into the chicken salad. I don’t do it too early because it can get soggy and turn color
Great on croissant or rolls and with crackers.
