These fabulous pineapple cupcakes are moist, buttery, and loaded with crushed pineapples. Coat muffin pans with non-stick spray, or use paper liners.<\/li>\n\n\n\n<li>In a medium mixing bowl, sift together the flour, baking powder, and salt. Stir with a whisk to combine. Set aside.<\/li>\n\n\n\n<li>In a separate large mixing bowl, use the electric mixer to combine the butter and sugar, and beat in the eggs, one at a time.  Then combine milk and vanilla extract, mixing well after each addition.<\/li>\n\n\n\n<li>Drain the pineapple chunks, and cut the pineapple chunks to smaller pieces. Set aside 1\/2 cup pineapples.  Add the remaining cut pineapples and almond slices to the batter.<\/li>\n\n\n\n<li>Fold in flour mixture and mix with the batter until smooth. Scoop into muffin pans. Arrange the remaining cut pineapple pieces on top of each cup.<\/li>\n\n\n\n<li>Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes or until a wooden toothpick inserted into the centers comes out clean.
