It&#8217;s the perfect summer side dish or companion to any Asian inspired meal.<\/p>\n\n\n\n<p><strong>Prep\/Cook time: <\/strong>15 minutes<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p><strong>DRESSING<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/3 cup rice vinegar\u00a0<\/li>\n\n\n\n<li>2 Tbsp granulated sugar\u00a0<\/li>\n\n\n\n<li>1\/2 tsp toasted sesame oil\u00a0<\/li>\n\n\n\n<li>1\/4 to 1\/2 tsp red pepper flakes <\/li>\n\n\n\n<li>1\/2 tsp salt <\/li>\n<\/ul>\n\n\n\n<p><strong>SALAD<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 large cucumbers\u00a0<\/li>\n\n\n\n<li>3 green onions<\/li>\n\n\n\n<li>1\/4 cup chopped peanuts\u00a0<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a small bowl, combine the rice vinegar, sugar, sesame oil, red pepper flakes, and salt. Set the dressing aside to give it time to blend.<\/li>\n\n\n\n<li>Peel and slice the cucumber using your favorite method (see photos below for my technique). Place the sliced cucumbers in a large bowl.<\/li>\n\n\n\n<li>Chop the peanuts into smaller pieces, if desired. Slice the green onions.<\/li>\n\n\n\n<li>Add the dressing, peanuts, and green onions to the sliced cucumbers. Stir to combine. Serve immediately or refrigerate until ready to eat.
